Perched high on the Mahanakorn Cube, the space at Morimoto is comfortable and relaxed yet refined with modern touches of carved wood and blue. The Iron Chef himself, handpicked Executive Chef Arnaud Drouville to oversee the day-to-day operations and maintain the high standards that diners of the Morimoto brand have come to expect.
Despite being an international brand, Morimoto Bangkok still has a focus on regionality. By sourcing ingredients from local farms they’re able to get the freshest produce available but inevitability that also changes the taste of some of their signature dishes. However, as explained by Chef Drouville this works in their favor – as the tastes are adjusted to better suit the Thai palate. By focusing on the highest quality ingredients available produce, seafood and meats are organic or imported regularly.
In classic Morimoto style, the menu seamlessly merges Japanese with Western cuisine. A menu staple and must try is the Hamachi Taco. Beautiful chunks of hamachi fish are tossed in a light citrus dressing, topped with the most delicately flavored guacamole and served in a crispy fried wanton taco shell.
Another signature must-eat item is the Tuna Pizza as it layers classically Italian flavors on a fresh and generous bed of tuna. A crunchy tortilla is used as the base, topped with slices of bluefin tuna, cilantro micro greens, slivered olives and red onions, cherry tomatoes, Thai red chilies, and finished with anchovy mayo. The Tuna Pizza makes for a satisfying yet light starter.
For a bit of wow factor order the Ishi Yaki Buri Bop. Rice and vegetables are served in a sizzling hot clay bowl, topped with raw hamachi and an egg yolk. Mixed tableside, your server will ever-so-slightly cook the raw fish on the inside edges of the bowl while stirring the egg and rice into a gentle fried rice.
Order the king crab legs for the ultimate indulgence. Prime segments of the legs are cracked open for easy eating and smothered in a creamy, spicy tobanjan aioli that features hints of sesame with a slight acidic bite that perfectly compliments the rich flavors of the crab.
If you visit Morimoto at lunchtime don’t pass up the opportunity to sink your teeth into his award winning burger. It was recently crowned the People’s Choice winner at the South Beach Wine & Food Festival, it’s simple yet offers a big beefy flavor. The crispy katsu style wagyu patty is paired with a mayo sauce and cabbage slaw.
After dinner you must order the s’mores, its’ an ice cream interpretation of this classic American treat. Smooth layers of vanilla and chocolate ice cream are placed atop salted caramel and topped with charred homemade marshmallow fluff and graham cracker crumbs. It’s so yum-worthy that I dare you to keep your eyes from rolling into the back of your head while this dessert melts in your mouth.
We also can’t rave enough about the staffing at Morimoto’s, they’re impeccably trained, friendly, and informed – prior to opening their doors the staff were trained for 6-8 weeks. The service is clean and incredibly well-timed.
